Terre del Crifo Castel del Monte DOP Rosé

The finest bunches of the native Bombino Nero grape, treated with the most meticulous traditional farming methods to extract the most precious juice. This produces this nectar with a rosy hue and hints of raspberry and citrus, a fresh, savory flavor, and a delicate almond finish.

Classification: Castel del Monte Rosé Protected Designation of Origin
Grapes: 100% Bombino Nero.
Production area: The first slopes of the Murgia hills northeast of Ruvo di Puglia.
Training system: Apulian pergola.
Harvest period: Mid-September.
Vinification: The grapes are immediately brought to the cellar and destemmed and crushed. They are then cooled to 10°C (50°F). They then undergo a brief maceration in the press for 4-6 hours to extract the aromas from the skins. The free-run must is harvested for fermentation in stainless steel at 15°C. The wine ages for 60 days on the lees before being bottled, where it
remains to mature for an additional 2 months.
Tasting Notes: The bright and intense color, somewhere between raspberry and cherry, harks back to the grape variety par excellence for rosés. Indeed, the broad and varied aromas of black cherry, pomegranate, red mulberry, and fresh berries burst forth on both the nose and the palate. The freshness is significant and lively, while a subtle savory note lingers on the finish.
Food Pairings: Mussels au gratin, pancotto, tiella, Mediterranean-style sea bream, baked stuffed tomatoes, pizza Margherita.
