NERODIVO Nero di Troia Primitivo Puglia PGI
Born from the blend of our region's two key grape varieties: Nero di Troia and Primitivo. Aged in French oak barrels for 10 months, it smooths the characteristic tannins, resulting in a rounded wine with a balanced structure and an elegant spiciness.
Classification: Puglia Protected Geographical Indication.
Grapes: Nero di Troia – Primitivo.
Production area: Selected vineyards in the Ruvo di Puglia area, on the limestone hills of Alta Murgia.
Training system: Spurred cordon.
Harvest period: Between the first ten days of September and the second half of October.
Vinification: The grapes, harvested by hand, are brought to the cellar for bunch selection and subsequent pressing and destemming. Following pre-fermentation maceration at a controlled temperature, the must is left to ferment with selected yeasts in steel tanks for 7-10 days. It is then gently pressed. The wine ages for 10 months in oak barrels before being bottled and released for sale.
Tasting Notes: This wine, with its intense, impenetrable red color, unfolds a bouquet of vigorous aromas on the nose, including blackberry and plum. On the palate, it is rounded and full-bodied, with an elegant structure that distinguishes its character. The tannins tantalize the palate and give way to a balsamic finish.
Food Pairings: fettuccine with wild boar ragù, torcinelli, pork and pancetta skewers, bombette, aged caciocavallo silano.
