Jazzo del Demonio Nero di Troia Puglia IGP

From the finest grapes of one of our area's most robust and distinctive local grape varieties, this intensely red wine boasts enveloping aromas of red fruits and a soft, spicy flavor, distinguished by the great structure of its tannins, harmoniously balanced in richness and expression.

Classification: Nero di Troia Puglia Protected Geographical Indication.
Grapes: 100% Nero di Troia.
Production area: Ruvo di Puglia, limestone hills of the Murgia.
Training system: Spurred cordon with a planting density of 4,000 vines per hectare.
Vinification: Freshly harvested, the grapes are taken to the cellar for bunch selection and subsequent destemming and pressing. Pre-fermentation maceration is then carried out at a controlled temperature for 24–48 hours, after which the must is left to ferment in stainless steel tanks for 7–10 days, also at a controlled temperature. After racking, the wine undergoes malolactic fermentation and then undergoes a brief stint in barrique before bottling. After a few months in the bottle, it is released for sale.
Tasting Notes: Ruby red color with vermilion hues. Cherries and black cherries stand out among the ripe red fruits. The smooth tannins and decisive freshness interpret the balance and character of this wine, which finishes long and persistent, on delicately balsamic notes.
Food Pairings: Bread meatballs with tomato sauce, grilled meat, bombette, muschiska, horsemeat stew, aged Canestrato Pugliese cheese.
Serving Temperature: 18°C
