Fuorilemura Nero di Troia Rosé Puglia IGP

Special winemaking techniques with a methodical respect for the raw materials give life to this elegant wine, with a pale color and luminous reflections. On the palate, an explosion of tropical fruit and good acidity reveal unexpected characteristics of one of Puglia's iconic grape varieties.
Classification: Puglia Protected Geographical Indication.
Grapes: 100% Nero di Troia.
Production area: First slopes of the Murgia hills, northeast of Ruvo di Puglia.
Training system: Apulian pergola.
Harvest period: Late September.
Vinification: The grapes, harvested by hand, are transferred to the cellar and destemmed and crushed, with the simultaneous addition of carbonic snow to protect them from oxidation. They are cooled to 10°C (50°F), and then briefly macerated in the press
for 4-6 hours to extract the aromas from the skins. The free-run must is harvested for fermentation in stainless steel tanks at 15°C. The wine ages on the lees for 30 days before bottling.
Tasting Notes: The color is pale and luminous. The nose is very complex and intense, rich in aromas reminiscent of fresh red berries. The same intensity of the fruit is found on the palate, accompanied by good acidity and a subtle savory finish.
Food Pairings: Excellent as an aperitif served with various vol-au-vents, meat carpaccio, seafood and Mediterranean salads, linguine with scampi and sea urchin pulp, or seared red tuna.
